The health department views handwashing with soap and running water as the only proper method for food handling hygiene. Your food vendors' permits will require their staff to have access to handwash stations, not just sanitizer. For public health and to meet permit conditions, you need dedicated handwash stations placed near the food vendor area and the restroom clusters.

Sanitizer dispensers on every portable toilet are a good addition for guest convenience between washes, but they cannot replace stations with soap and water. The service for a station is similar to a unit; a vacuum truck empties the gray water tank and refills the fresh water and soap. For a three-day event, plan on a mid-event service visit to ensure tanks do not overflow. The cost is driven by the number of stations and the service frequency required.
